Getting too many eggs? Try fermenting them!
Fermenting eggs is a great way of preserving eggs without the (sometimes) harsh vinegar taste of pickled eggs.
Easy to make and delicious, fermented eggs are so much tastier than the simple hard-boiled eggs. Plus, they are versatile both in terms of flavor and use. You can make them spicy with jalapenos and peppercorns or you can add garlic, dill, and many other spices. As for use, you can add them to your favorite salad, serve them for breakfast or turn them into deviled eggs.
This spring I bought 50 chicks, in preparation for my daughter’s family moving closer to me in the fall of 2023. But they have been delayed a bit, but now all those chicks are chickens and are laying now. I will start selling some soon but in the meantime it is a lot for my husband and I, so I fermented a bunch.
WHAT’S THE DIFFERENCE BETWEEN FERMENTED EGGS AND PICKLED EGGS?
Fermented eggs are similar in taste to hard-boiled eggs, especially if you use a simple brine. They are just a bit fizzy and have a slightly different texture.
The method used for preserving them is similar to pickling, except no vinegar is involved. That’s why the taste is closer to hard-boiled eggs than pickled eggs.
When you pickle eggs, you want to store the jar in the fridge for two days whereas for the fermented version you store the jar at room temperature.
Fermented eggs don’t last as long as pickled eggs but due to their mild flavor they are more versatile and you can use them in many recipes.

You can add any herbs in any variation you would like. My favorite is dill seed , peppercorn, and garlic. I have also made some with chili powder and it makes the best egg salad sandwiches, with a bit of mayo.

HOW LONG DO FERMENTED EGGS LAST?
Pickled eggs can last for up to a month in the fridge, Fermented eggs can last up to 2 weeks in the fridge.
WHAT YOU NEED TO MAKE FERMENTED EGGS
- Mixing bowl
- Measuring cups
- Half gallon, wide mouth, mason jars and lid
- Steamer basket or instanta pot.
- Saucepan
- Fermenting weights or Pickle pipe.
Ingredients
- 24 hard boiled eggs ( you can hard boil them in the intata pot for 5 mins and they are super easy peels every time!)
- ½ cup of starter (Sauerkraut brine or Kimchi brine)
- 2 Tbsp salt
- 2-4 cups water, chlorine free
Now for the fun part, putting it all together!
- Mix the water, starter, and salt in a wide mouth half gallon jar. Stir a few times till the salt is mostly dissolved. Or you could use the leftover brine from fermented vegetables for the brine and culture.
- Fill the jar with hard-boiled eggs. Add other flavorings that you want to include (see the section above on flavors)
- Use a weight to keep the eggs below the brine. If necessary, add more water to ensure that the eggs are completely covered. The eggs need to be completely submerged in the brine.
- Cap the jar with a pickle pipe or loose lid.
- Place the jar in a cool, dark place. A closet or cupboard is fine. Leave the eggs to ferment for 1-3 days.
- Store the pickled eggs in the fridge, and enjoy within 2 weeks.
